New England Clam Chowder
食材:
drained, chopped clams(broth preserve)適量,瀝乾、跺成小片的蛤蜊(保留蛤蜊本身的汁液)
diced salt pork or bacon 少量,醃豬肉或培根
onions chopped fine 少量,洋蔥切碎
2 medium potatoes, chopped 兩顆切成極小塊的馬鈴薯

作法:
Fry salt pork or bacon till crisp. Remove from the pan. 把培根或醃豬肉炒到酥脆
Add onion to remaining fat in the pan and cook three
minutes. 放入洋蔥,以剩油炒三分鐘
Add potatoes. Add
clam broth or water to almost cover potatoes. 以水或蛤蜊汁液蓋滿馬鈴薯
Cook over low heat till potatoes are tender. 以慢火煮熟馬鈴薯
Add clams and cook for just two minutes to boil. 蛤蜊煮兩分鐘到熟
Add heated, not boiled, cream or milk. Season to taste. 加熱牛奶或
